Originating in Campania, paccheri are exceptionally large, smooth pasta tubes suited to substantial meat ragù, seafood sauces, creamy sauces and baked or stuffed preparations. Rustichella d'Abruzzo makes this pasta in Italy from durum wheat semolina and water, using bronze dies to create a porous surface that holds sauce effectively. It is slowly dried at a low temperature to preserve the qualities of the selected durum wheat.
