Rustichella d'Abruzzo Orecchiette is made in Italy from durum wheat semolina and water. Named after its distinctive 'little ear' shape, this artisan pasta is bronze drawn for a textured surface and slowly dried at low temperature. The cupped pieces hold robust sauces particularly well and are traditionally served with cime di rapa, garlic and sausage, or paired with a hearty meat ragù. Recommended cooking time is 12–16 minutes.
